Strawberry risotto recipe
Prepare the stock. Keep it boiling while you're cooking your risotto.Begin cooking the risotto. Meanwhile add the olive oil and rice in a large saucepan. Cook for 3-4 minutes until rice looks milky. Add the wine and simmer until absorbed, stirring.
At this point add 2 ladlefuls of vegetable stock and simmer until absorbed, stirring. Keep on adding stock, ladle by ladle, until the rice is tender.
The last step. A minute before the end of cooking, add the strawberries. Remember to put apart some fruits to garnish.
Turn off the stove, add the chives and stir. Serve after few minutes.
Note
- - Use fresh chives for the best result.
- - You can mix the rice with a cream cheese or mascarpone if you like, simultaneously with chives. But obviously the fat amount is completely different.
