the best welsh rare bit ever

 Welsh rarebitcut up some slices thickly of the best bread you can get, you can use farmhouse cut thickly or soda cut in same way.
toast your bread, not black but normal then add pieces of very mature cheddar, gorgonzola or stilton and some apricot stilton but not too much of this . smother toast with cheese and put back under a not very hot grill. when done a few drops of balsamic vinegar or worcs sauce . Drink with a good red wine or bitter beer
